That being said, I always secretly liked the XJS coupe.. (I like how he calls it an XKS, whatever that is)

I remember saying something like that a while ago, and got a really thoughtful and constructive reply from a guy who's worked with several Jaaaaaag V12s from that period. What I remember most from that reply was that if you just change out all the godawful electronics for aftermarket stuff it's a really good engine.

Speaking of old V12s, last year a very car savvy friend bought a MB S600 here in Detroit for $1K and drove it home. It needs everything but it's a 12 month project that he will enjoy. I drove it around the block and it's like being at the helm of a nuclear powered aircraft carrier. Only probably more dangerous.

If it were an XJC... maybe, for the rare factor.
XJS is decent looking, but just. It isn't quite LUSTWORTHY.
It is harder to take on a known headache like resurrecting and maintaining a Jag V12, lucas-electrified, 25-ish year old car with likely rust-belt effects.
It just doesn't generate the emotional gravitation that the E-type did, even for 800$.
Maybe for someone with other jags, lots of tools, and experience. Probably not great for someone's jaguar initiation.

$600 would be a nice price if http://www.jagsthatrun.com is planned, otherwise crackpipe due to "needs mechanical work" despite the cheap asking price.
